Pickl. is a fan favourite serving up the most famous fried chicken sandwiches and burgers in town.

Starting life in JLT, there’s now an outlet in Deira, as well as a food truck in uptown Mirdif, satisfying Pickl-lovers across the city. No surprise founder Steve Flawith takes his sandwiches seriously, with new flavour combinations and dishes popping up on Pickl’s menu frequently.

How long have you been in Dubai?
Six years, we’ve had Pickl for three.

What got you into cooking?
I actually stumbled into it by accident when I was 17. I kicked off my career as a dishwasher and ended up in chef whites two weeks later.

What’s your signature dish?
I’m all about everything that’s fried chicken and burger related.

What’s the golden rule in your kitchen?
Communication, communication, communication.

What’s your secret weapon?
To maintain an inner zen at all times. To adopt a healthy mindset, accept everyone is different and to lead the way with creativity.

What’s your favourite at-home snack?
Roast chicken, fresh baguette, spicy mango chutney and mature cheddar.

What’s your go-to ingredient?
Eggs. They’re just awesome, versatile, tasty,eggs pretty much go with most things. Eggs for the win.

If you weren’t a chef what would you be?
An architect. The idea of being able to take that to streets and make an impact on communities has always intrigued me. It’s one of the many reasons I love Dubai, the ever-changing skyline is awesome.

How spicy is too spicy?
Nothing is ever too spicy.

Do you have a sweet tooth?
No. Chances are I’d order a starter for dessert.

What’s on the horizon for restaurants?
A resurgence of simple cooking, executed well.
