Recipe: Summer berry swirled ice lollies

The summery snack from Marks & Spencer calls for just four ingredients

Looking to beat the summer heat with an easy-to-make, quick and easy summer treat? Of course you are.

Marks & Spencer has shared its summer berry swirled ice lolly recipe recipe. Not only will these super-cute ice lollies do wonders for your Instagram feed, they also only call for four ingredients and are actually pretty healthy.

If you’re vegan, you can also replace the Greek yogurt with a vegan-friendly alternative.

The recipe makes ten ice lollies and ice lolly moulds can be found online via Amazon and noon.

Now let’s crack on with those ice lollies…

Ingredients:

• 75g blackberries
• 150g raspberries
• 4 tsp runny honey
• 300g Greek yogurt

Method:

• Mash the blackberries on a plate with two teaspoons of the honey using a fork.

• Do the same with the raspberries and another two teaspoons of the honey on a second plate.

• Layer alternate spoonfuls of the mashed fruits with the yoghurt in plastic shot glasses or ice lolly moulds.

• Add lolly sticks and freeze overnight. To serve, dip the moulds briefly in warm water, then lift out of the moulds and enjoy.
