New Italian restaurant opens at Conrad Abu Dhabi Etihad Towers

Sole replaces BiCE in the newly rebranded hotel

New restaurants just keep on opening in Abu Dhabi.

The latest is Sole, a new Italian spot at Conrad Abu Dhabi Etihad Towers due to open fully before the end of the month.

Sitting in the space that used to house BiCE, the venue is said to offer “a contemporary and vibrant take on Italian cuisine”.

There are tables inside and outdoors and the kitchen will pride itself on sourcing the finest ingredients available but also have alight-hearted atmosphere.

Signature dishes include ‘We’ve Twisted A Classic’, which is double dough ravioli, spinach, homemade ricotta, butter-poached red mazzara prawn and artichoke crisps, ‘The Poor Marriage’, which includes pasta potato, veal pancetta, smoked provola, 24-month old reggiano cheese and black truffle, and ‘What A Catch’, a combination of poached sea bass, herbs, roasted garlic, fresh tomato broth and charred lemon.

The signature dessert is ‘Trust Me, I’m from Napoli’ made from Italian cream, berries and, erm, bling, according to the press release. We look forward to trying it.

Head chef Simone De Vivo said, “It has been a great personal achievement to have joined this incredible team and become a part of the Conrad Hotels & Resorts family. I am extremely excited to head up Sole, and share my love for innovative, fun, and flavoursome food. I began my culinary journey in my hometown of Naples, Italy and I cannot wait to share everything I have learnt and mastered along the way.”

Hilton recently began operating the Etihad Towers under the Conrad brand, replacing Jumeirah.
