Love ice cream? So does Scoopi. But Scoopi’s ice cream is not ice cream as you know it.

Famed for its inventive ice cream flavours and daring desserts, Scoopi’s founder Zubin Doshi is all about creativity.

And if you want to try something super-exciting, and sweet, this year, then get yourself down to Time Out Market Dubai, as the creative dessert bar is coming to Souk Al Bahar in 2021.

We catch up with Doshi about innovative sweets and nitrogen-chilled ice cream.

How long have you been in Dubai?

Twelve years.

What makes Scoopi’s ice cream different?

Scoopi’s ice creams are cooled with liquid nitrogen. The idea came into place from the exciting world of molecular gastronomy and it grew from there.

What’s this about gold sprinkled ice cream?

We’re known for the most expensive scoop of ice cream in Dubai, which is called the Black Diamond. It has Italian truffles, Iranian saffron, and edible 23-karat gold.

What do people love about Scoopi?

The quality, consistency, the creativity and the price point (Black Diamond aside).

What’s your most creative dish?

The most innovative dessert for us is our avocado ice cream with raspberry dip and Mexican chilli on the top.

What’s the golden rule in your kitchen?

Never say no to a customer and always serve the best.

What’s your secret weapon?

Quality ingredients and making something so good that you smile before you serve it.

What’s your go-to meal to cook at home?

Recipes from my hometown in Gujarat, India.

When you’re not taste-testing new ice cream creations, what’s your go-to food?

Kebabs.

How do you come up with new recipes?

With a great sense of imagination, and thinking about what people want.

Do you have a sweet tooth?

Surprisingly, not really.

What’s the next big food trend?

I think there’s a leaning more towards easy, quick and casual food.
