Cyril Calmet, chef de cuisine at the Shangri-La Hotel

Time Out Abu Dhabi Young Chef of the Year contestant talks food

At what age did you decide you wanted to cook for a living?
It was a natural decision. My mum was always in the kitchen preparing our dinner when I was a child. I spent a lot of time with her and watched how much love she put into it. I decided to enter the Culinary School when I was 14 years old.

Why did you enter the competition?
I knew it would be a good learning experience, and will help me to grow in my career. I am very curious to see what the other chefs will do too. I am looking forward to it.

Were you nervous about the final cook-off?
Of course, I didn’t want to disappoint.

So after a long work day in the kitchen, do you cook when you get home or order takeout?
Honestly, not that much. During my days off, I like to eat something on the terrace with friends.

What ingredient do you dislike using in your kitchen most? And what best?
I really like using fish… and I don’t really have something that I dislike using in the kitchen.

What do you think of the Abu Dhabi food scene?
I don’t have the time to try too many restaurants here in Abu Dhabi. But of the ones I have tried, Bord Eau restaurant has amazing French cuisine prepared by chef Alexandre Pernetta. I know there are a lot of talented chefs in this city who are doing an amazing job like chef Deff Haupt at the Sofitel. I am looking forward to trying all of Abu Dhabi’s great restaurants, and I am sure that many more chefs will come to this city during the next few years.

Who’s your culinary hero?
I really like Joel Robuchon.
