Fulvio Opalio’s eponymous enterprise sees the head chef of Il Borro Tuscan Bistro – among Dubai’s most widely lauded and awarded restaurants – serve up a menu featuring a carefully curated selection of his most popular dishes. Those in the know will flock for a plate of their beloved (and here reimagined) burrata, or Opalio’s terrific tagliatelle al ragu di vitello. But you’re missing out if you don’t try the frankly scene-stealing polpo alla brace. Classic Italian cooking from a seriously accomplished chef.
