Chef Matthew Kenney to open three-storey vegan dining complex at Expo 2020 Dubai

Veg’d, XYST and Mudrá firing up their clean-eats kitchens

A three-storey vegan dining complex will open its doors inside Terra – The Sustainability Pavilion when Expo 2020 Dubai gets underway on Thursday October 1.

Helmed by celebrity plant-based chef Matthew Kenney, the site will house a trio of vegan kitchens, each of which will bring its own menu of clean, sustainable eats to the world’s greatest show.

At Veg’d, chef Kenney will strive to plate up minimally processed meals that are both vibrant and wholesome. Signature plates include cauliflower kung pao tofu zucchini and Cali chicken tenders with tempeh bacon and ranch.

Up on the first floor, concept XYST will see the plant-based approach turned to Mediterranean and Middle Eastern cuisine, pulling artistic liberties to create playful adaptations of traditional cultural dishes.

Visitors hungry from feeding their minds at the global gathering of innovators can gorge on plant-based shawarma, stuffed flatbread, an extensive list of original meze options as well as a craft hops and grape programme.

For a livelier get-together with friends and family, Terra’s rooftop will house Mudrá, which aims to share the plant-based lifestyle though approachable cuisine.

The menu is billed to have a wide range of options, from gourmet pizzas and burgers to novelty nikkei sushi, alongside starters and mains to impress sophisticated palates.

Mudrá comes complete with a DJ and views over the premiere Expo 2020 Dubai exhibition.

Chef Kenney said: “In the recent years, there has been so much attention on the benefits of plant-based living – not only for our health, but also for the environment. It’s all about cooking healthy, sustainable dishes by using clean, organic and unprocessed ingredients to create vibrant dishes.

“We are excited to be part of Expo 2020 and looking forward to continue creating innovative dishes that are familiar to everyone, but with an innovative spin.”
