Ingredients
(for 20 small cookies)
1 1⁄2 cup oat flakes
3⁄4 cup fine oatmeal
3⁄4 cup almond puree or almond flower
1 1⁄2 tsp aluminum free baking powder
1 cup grated coconut
1 cup unsweetened soy milk
1⁄2 cup olive oil or coconut oil
A few drops of stevia to taste
1 tsp cinnamon powder 1 tsp cardamom powder
A generous hand full of soaked goji berries
Method
1 Mix all dry ingredients together in a big bowl.
2 Add the oil, soymilk, almond pulp, stevia and soaked gojis. Mix until you get a sticky doe.
3 Heat the oven on a 180°C, place a sheet of baking paper on the baking tray. Shape small round and thick cookies with your hands and place them on the baking tray.
4 Bake cookies for 20-25 minutes until golden brown on both sides.
