Ingredients
15oz. canned or fresh chickpeas, drained
1 medium onion, finely chopped
1 tbsp minced garlic
2 tbsp fresh parsley, finely chopped
1 tsp coriander
¾ tsp cumin
½ tsp salt
2 tbsp flour
Frying oil (canola or vegetable)
Preparation
1 Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in a medium bowl. Add the flour and combine them all well.
2 Mash the chickpeas, making sure to mix ingredients together. You can also combine ingredients in a food processor. You want the result to be a thick paste.
3 Form the mixture into small balls, about the size of a ping pong ball. Flatten them slightly.
4 Preheat the oil to 180°C for a few minutes, and then drop the falafel balls into the hot oil and fry until the outside is golden.
5 Remove and serve with a side of tahina sauce, chopped parsley, pickles and tomatoes.
