Hype dish: Matilda cake at Parker’s

What goes into the Instagram dessert sensation

Parker’s Matilda Cake holds legend status on Instagram. This scroll-stopper joined the menu back in 2020, and has since become a staple at the café’s locations across the UAE.

This towering slice takes its inspiration from the classic scene in the movie adaptation of Roald Dahl’s Matilda, where dessert thief Bruce Bogtrotter is forced to take on an entire chocolate cake in front of the whole school. And we certainly don’t need Ms Trunchbull to tell us to take out our forks and dig into this mighty chocolate fudge fantasy.

“Parker’s is all about nostalgia and those sentimental tingles you get when you think about your childhood,” says Parker’s Maryam W. Al Saqa. “The entire team remembered this scene, and wished we could taste the cake. So we thought, ‘why wish when we can create?’.”

Thankfully no sweat or blood went into its making, but plenty of baking expertise has ensured it’s an absolute belter of a dish (and you’ll certainly need to literally loosen your own belt if you’re tackling it solo).

The hype

“We’re not just about the food – we love creating experiences first and foremost, but this one really took off after we shared it on social media. Because who doesn’t absolutely love a good chocolate cake?”

The chocolate

Three massive slabs of chocolate sponge cake are made with sweet and semi-sweet chocolate, cocoa powder and a whole load of butter and sugar. “The oh-so-tasty cake layers are separated by four layers of decadent, delicious chocolate sauce.” But what about the actual chocolate. Is it milk? Is it dark? Parker’s is keeping this a closely guard-ed secret.

In true Bruce style, the whole thing is drowned in a load of warm chocolate fudge sauce, made with a double cream base. And get ready to snap that Insta shot.“Everyone loves filming the the chocolate waterfall – so you’ll get a warning signal from staff to fire up those camera phones so you don’t miss it.”

Even more chocolate

Not enough cocoa? We get it. Thankfully the whole thing is finished off with crumbled chocolate bars, sprinkled over the top.
