Michelin-starred chef to teach kitchen masterclass in Abu Dhabi

Michelin-starred chef Theo Randall is visiting Abu Dhabi from London to teach a masterclass in partnership with Jones the Grocer. Caitlyn Davey asked him about working and visiting Abu Dhabi.

How long has it been since you last worked in Abu Dhabi?
I was in Abu Dhabi very recently. I was one of the guest chefs for the Gourmet Abu Dhabi food festival, based based at InterContinental.

How does the culinary scene in Abu Dhabi differ from London?
There are a lot of similarities in that there is a very strong food and dining-out culture here and people expect nothing but top quality. I have noticed that there are quite a few successful London restaurants doing very well here.

Have you come up against hurdles when it comes to sourcing fresh produce compared with back home?
From what I have experienced, there is no problem in sourcing products, as a lot of the fresh produce is imported – and the suppliers here know that if they send something second-rate, the restaurants and hotels will not accept it. Over time, I think there will be a lot more local products used. I tried a burrata from Abu Dhabi and the quality was excellent, so there are good producers in the UAE. And, of course, the fish is amazing here!

Do you enjoy passing on your culinary knowledge?
Yes, I love teaching people to cook. My mother used to teach art and I have her patience. I think it is really important that everyone should know how to cook. You appreciate good food more if you have some knowledge. I run a series of cookery classes in my restaurant, which we have been doing for six years, and I love the interaction and interest from all the people attending them.

How have you found working with Jones the Grocer?
I’ve really enjoyed working with Jones the Grocer. They are very professional and have a great knowledge of all cuisines.

Can we expect to see you in Abu Dhabi again?
Yes, I think Abu Dhabi is a very special place and I look forward to returning soon!
