Time Out Market Dubai’s pizza expert on New York pies with personality

Famous for its New York-meets-Neapolitan pizza and original topping mash-ups, Pitfire commands a loyal following.

Set up by Michele and Bill Johnson, the JLT fave promises big pies with even bigger personalities. Signature pizzas include Pitfire Primo, the Truff Daddy and Bill’s Special, while Pitfire is known for its tasty crushed tomato sauce and super-fresh mozzarella.

The team will be serving up their signature pizzas at Time Out Market DUbai next year, here’s the low-down on the super-cool JLT joint.

How Did pitfire come about?
We’re a husband and wife team and Pitfire’s been around for four and a half years now. Neither my husband Bill nor I are trained chefs, although we dreamt up Pitfire and have diligently perfected our products over the years. I’m obsessed with food though, and have been in the kitchen with my grandmother and mother since I was a kid.

What’s Pitfire all about?
Our pizza is the star of the show.

Who are your culinary influences?
My grandmother, my mother and a few family friends where I grew up in Alabama. Apart from that, I learned a tonne by devouring every cooking show I could find.

What’s the golden rule in your kitchen?
Keep it clean – that applies to equipment, processes, technique, speed and execution.

What makes it all work?
Passion and a love of feeding people.

What would be your last meal?
Freshly cooked crab with lots of melted butter, seasoned with fresh lemon juice and salt for dunking. I could eat my weight in that.

How do you come up with new recipes?
Through my cravings, which could come from anywhere, a photo on Instagram, a dream, anywhere. When I get a particular craving I can’t stop until it’s satisfied and I will literally drive all over Dubai to get what I need to make it if I have to.

What’s the next big food trend?
Sustainable, locally made and sourced-food.
