The Grilling: Al Fanar’s Hashem Al Marzouqi

Time Out Market Dubai’s Emirati cuisine experts on traditional dishes in the city

Time Out Market Dubai is launching soon, and where better to try authentic Emirati dishes?

For traditional Emirati cuisine, Al Fanar is a go-to in the city. And soon you’ll be able to try the tasty, authentic food in Downtown Dubai. Recipes passed down through generations include sautéed black tiger prawns with slow-cooked biryani rice, sea bass machboos, and classic dessert luqiamat – a sweet syrupy dish.

Founder Hashem Al Marzouqi tell us why the restaurant has such staying power and why authenticity is so important

How long has Al Fanar been in town?

Al Fanar Restaurant was established in 2011, so this September we’re celebrating our tenth anniversary. We were the first Emirati restaurant to open in UAE, and that has meant it’s been successful.

What do people come back to Al Fanar for time and time again?

We are most famous for our machboos and luqaimat, because these dishes are truly unique Emirati dishes. All of our dishes are authentically Emirati, though, and we source all our ingredients locally.

What is the inspiration behind the restaurant?

Our goal is to educate people about Emirati culture through our food. We always want to make sure our customers are happy and satisfied – that is so important.

What is it about Dubai’s dining scene that you enjoy?

I like both the variety and diversity.

What’s your go-to meal to cook at home?

Prawn biryani.

What’s your single favourite thing to eat in the whole world?

My mother’s famous meat stew.

What’s your least favourite ingredient?

At Al Fanar we think all ingredients are important, however we don’t like anything artificial.

What’s the next big food trend?

As a team we believe there will be a greater leaning towards homegrown concepts instead of franchises.
