Recipe: Sirloin steak by Baba

Cracking steak at-home, with help from one of Dubai’s top steak chefs

Nothing quite beats a steak dinner, especially a steak dinner from one of Dubai’s top steak restaurants. There’s every chance you’re getting a bit more flair in the kitchen right now, so why not cobble together this beautiful cut of beef, with help from Baba, Time Out Dubai’s highly commended steak restaurant from the 2020 Time Out Dubai Restaurant Awards?

Executive Sous Chef Todd from the Mina Seyahi complex of hotels (think Westin and Le Meridién) has given us his tips on how to prepare the perfect sirloin steak at home, and you only need a handful of ingredients.

Obviously, steak is one of them, here are the rest.

Ingredients:
2 x 250g Australian sirloin steaks
4 x cloves crushed garlic
Fresh thyme
50g butter
Crushed sea salt
Crushed pepper
Olive oil

Recipe:
1. Season your steaks with fresh salt on each side (avoid pepper to avoid burning the spice while cooking).

2. Pour a good glug of olive oil into a pan, from cold, and place the fatty rind of each steak against the bottom of the pan – so it looks like the steaks are standing up.

3. Get the rind a bit crispy (this helps avoid chewy fat morsels in your steak), and keep the juices in your pan for cooking the steak.

4. Leave the steaks to rest briefly before returning to the pan to cook one side for 2-3 minutes.

5. Keep the steaks moving to avoid sticking.

6. Turn each steak and cook for another 2-3 minutes.

7. Remove steaks and leave for 4 minutes under a loose covering of tin foil (do not wrap, just place the sheet over lightly).

8. Return to the pan briefly with butter, garlic and fresh thyme, and baste.

9. Remove from the pan, leave to stand again briefly then slice to serve with your choice of sauce and accompaniment (perhaps some grilled asparagus).
