Recipe: Lamb, feta and bulgur salad

Up your salad game with this easy-to-make recipe from Waitrose

Who said salads had to be boring? This scrummy recipe from Waitrose sounds like our kind of salad and can be made in less than ten minutes.

The recipe serves two and is perfect for those on the go looking to refuel with a healthy and flavourful dish.

Ingredients:
• 1½ tbsp extra virgin olive oil
• 2 lean lamb leg steaks
• 300g pack Waitrose Bulgur Wheat, Quinoa & Rainbow Vegetables
• 75g frozen soya beans, defrosted
• 100g cherry tomatoes, halved
• 50g feta, crumbled
• Juice of half a lemon

Method:
• Heat half a tablespoon of oil in a frying pan and fry the lamb for two-three minutes each side.

• Remove and set aside to rest.

• Meanwhile, place the bulgur wheat mix and soya beans in a large bowl and microwave for two minutes.

• Then stir in the tomatoes, feta, remaining oil and lemon juice.

• Season and serve with the lamb.
