Recipe: Pret A Manger Coconut Bites

Try these vegan snacks from the popular high street coffee shop chain

Pret A Manger is a hit with Brits looking for a lunchtime bite to eat, and happily there are four branches here in Dubai. In even better news the coffee shop chain is now releasing recipe ideas to keep us going at home.
If you’ve already made the astonishingly chocolatey dark chocolate chunk cookies (you can find the recipe here) and Pret’s choc bar (click here for that one) we now bring you the popular coconut bites.

Not only are they super-tasty, they’re vegan too.

Coconut bites
Makes 12

Ingredients
• 100g desiccated coconut
• 3 ½ tbsp carob sugar agave or maple syrup)
• 2 tbsp coconut oil
• ½ tsp vanilla extract
• 1/8 tsp salt
• 85g vegan dark chocolate
• 1 tsp coconut oil

Method
• Combine the desiccated coconut, carob syrup, coconut oil, vanilla and salt in a food processor and blitz until well blended.

• Line a 2cm square tin with greaseproof paper and pour in the mix, press down firmly with the back of a spatula until fully compressed ,then place in the freezer until firm.

• Break the chocolate into a glass bowl over a simmering pan of water (don’t let the bowl touch the water) and heat gently until melted. Add the coconut oil and mix thoroughly.

• Take the coconut bar out of the freezer and cut into small rectangle bites and dip in the chocolate until fully coated.

• Place on greaseproof paper and allow to set for a couple of hours.
