As Time Out Market Dubai celebrates its first birthday this month, it welcomes four new vendors: Slab cocina, Lana Lusa, The Lighthouse – Pastry and Dessert and Boon.

All brilliant, all original, all utterly delicious. And all 100 percent born in Dubai.

They each bring distinct new flavours to Dubai, from Latin America to Portugal.

And they each also bring their own fabulous, absolutely must-try signature dishes and drinks. Which we’ve already been tasting behind the scenes, so we can tell you the top dishes to put on your must-try list.

Lana Lusa

Octopus salad

New dishes at Time Out Market, Lana Lusa

Meaty, smooth and seasoned to perfection, the octopus is the centre-piece of this salad. Which makes it the best kind of salad if you ask us. Parsley, pepper and fresh onion add a familiar and fresh Mediterranean flavour.

Salted codfish with sea bass and avocado

One of Lana Lusa’s signatures, now available at Time Out Market. Fresh with tomato, creamy with avocado and perfectly preserved cod, the perfect light lunch or starter.

Bacalhau a bras

Take one mouthful, close your eyes and be whisked away to Portugal, with this very traditional take on the bacalhau a bras – salted cod, with potato and eggs, garnished with olives.

Seafood rice

Ready for a more substantial feed? Try Lana Lusa’s seafood rice once and we think it’ll soon rise to the top of your Time Out Market Dubai must-try list. Absolutely brimming with shrimps, clams, mussels, squid, and seabass, doused in tomato sauce.

Pastel de nata

Sometimes the simplest of things are the most beautiful, most delicious, and most moreish. Meet the pastel de nata, Lana Lusa’s famous custard tart, ever so delicately burnt and warm with cinnamon. Only question is; can you do it in one bite or two?

Tuna tostada nikkei

Chef Rodriques’ tuna tostada Nikkei are mouth-sized morsels of Latin American deliciousness. Wait for the perfect crunch of that crispy flour tortilla base as you take your first nibble, then prepare for the mix of truffle mayo, soy truffle glaze, jalapeno, radish and shiso to take hold. Did we mention the truffle?

Truffle chicken empanadas

Like empanadas? Like truffle? Put them together and you’ll soon find one plate of SLAB cocina’s truffle chicken empanadas is just the beginning. These Parmesan and shaved truffle covered pastry parcels come filled with an aji amarillo pulled chicken filling and a sharp, sweet kalamata olive dip.

Corn fritters

Whatever you’re ordering at Time Out Market, add the corn fritters. Go on, add two bowls. Smothered in garlic kew pie mayo, feta and spring onion, veggie or not, these will get you salivating.

Chipotle ceviche mixto

Ceviches are best when fresh, light and in our opinion, with a bit of a kick. This one from SLAB cocina has it all; with mixed shellfish swimming in a chipotle leche de tigre sauce topped with roasted sweet potatoes and plenty of crisp cancha, a totally satisfying Peruvian corn nut.

Tacos Arabes

Get your hands and chops round the tacos Arabes, another signature from chef Rodriques now available at Time Out Market. Crispy beef is paired with avo and queso oaxaca, akin to a Mexican mozzarella, and covered in chiptotle adobo. It’s messy, but that’s what makes us mad for it.

The Lighthouse – Pastry and Dessert

Pasion Fruit & Yuzu Cheesecake

Pretty as a picture and the right side of sour, grab a spoon and dig in. Devour the hazelnut base, baked cream cheese filling and a passion fruit and yuzu gelée that’ll make your eyes crinkle.

Saffron Milk Cake

A Lighthouse classic, diners across Dubai are set to come flocking to Time Out Market for the saffron milk cake. Sponge cake soaked in saffron-infused milk topped with a swirl of whipped cream, it’s a gentle hug on a plate.

Tiramisu

Have you ever seen a prettier tiramisu? The classic dish gets a modern twist for Time Out Market Dubai, with perfectly piped layers of mascarpone and coffee-soaked lady finger biscuits, garnished with shards of tempered chocolate.

Carrot Cake

Soft. sweet cake, and even sweeter icing, thanks to a vanilla and cream cheese frosting. Don’t worry, there’s plenty of freshly shredded carrot, cinnamon and caramelised pecan in there too. This is what carrot cake should be like.

Lemongrass crème brulee

You can’t beat a crème brûlée. Hang on, maybe you can. With The Lighthouse – Pastry and Desserts’ lemongrass-infused version. Break through the perfectly sweet crust, and don’t look back as you spoon up mouthful after mouthful of smooth custard flavoured with fresh lemongrass and Madagascan vanilla bean custard.

Infused nitro cold brew

Time Out Market is not just all about food, you know. Mostly, but not all. Coffee connoisseurs are now in the safest of hands with Boon, which has some signature specialities like the infused nitro cold brew to share.

Affogato

Hot espresso and vanilla ice cream? Is it a drink or a dessert? We don’t know, and we don’t care. Have a taste of the ice cream before it melts , making the sweetest of coffees. All from Boon’s finest Arabica coffee beans of course.

Avocado toast

A classic in Dubai, perfectly portioned and presented at Boon. Whether for breakfast or lunch, you won’t go wrong here, while the addition of labneh and a sprinkling of dried fruits adds a sweet, local edge.

Cinnamon roll

Go on, treat yourself. Peel open the roll, take an enormous bite or be kind and split it in two. However you tackle Boon’s cinnamon roll, you’ll probably need an espresso to pick you up afterwards.
